The InterContinental Chiang Mai The Mae Ping is poised to enrich its distinguished array of dining offerings with the anticipated launch of Chiang Mai’s inaugural high-end Chinese eatery, Hong’s Chinese Restaurant & Sky Bar, set to open its doors on March 29, 2024.

Helmed by the esteemed Chef Chong Li, Hong’s Chinese Restaurant & Sky Bar aims to present an exquisite menu that highlights the zestful tastes of Sichuan fare, the refined seasonal tastes of Cantonese cooking, and the harmonious flavours of Taiwanese gastronomy. The restaurant’s design thoughtfully nods to the historical ties between Lanna and China through strategic use of propitious colours and motifs. Situated on the 16th storey, diners will be treated to sweeping views of the Doi Suthep mountain and the urban landscape while indulging in a repertoire of the chef’s signature à la carte masterpieces, including the likes of mapo tofu with lobster; sweet and sour squirrel fish embellished with pine nuts; crispy tiger prawns laced with wasabi; wagyu beef short ribs dressed in a sumptuous Sichuan-style sauce; along with a variety of other local favourites.

Beyond an extensive selection of à la carte items featuring grilled delicacies, stir-fried seafood, dim sum, noodles, and rice, Hong’s introduces the concept of a premium Chinese banquet experience, designed to be the perfect setting for both intimate family dinners and formal business gatherings.

At the Sky Bar above, the establishment’s expertise in mixology is on full display with an array of creative craft cocktails that draw inspiration from the region’s produce, culture, and legacy. A curated menu of light bites complements the inventive drinks, with options including deep-fried taro with free-range duck; crispy tacos with a filling of fried mushrooms and wagyu beef; crab meat cones topped with Sichuan micro herbs; and other delectable treats.

“Chinese cuisine is all about balance and contrast, and when done right, the flavours work together on a level you simply can’t find anywhere else. In China we call it kougan, or mouth-feel,” stated Chef Chong Li. “This intricate dance of spices and textures is the experience guests can expect when dining with us at Hong’s: dishes that embrace experimentation and innovation, yet always respect the roots and heritage of Chinese cuisine.”
